Now I was super excited when I moved to Hong Kong and saw what I thought was the craziest veggie in the world. Two years on and I still love it. Its beautiful. Its like the sand dollar of the veg world.
This soup was nice and gental on the palate too so why dont you try and make it. Though in Europe the lotus root might be hard to find!!
Some chicken pieces with bone better
Lotust root, two big sections or 4 small.
1/4 cup coix seeds
1.5L water
Simmer for 1 - 2 hours
Easy peasy!
Next time I may add some goji berries to add an element of sweet bitter
